Fajita-Stuffed Chicken {Healthy Style}

Fajita-Stuffed Chicken

OHHH MY - sooooo good!!!
Trinity loved it too!!
We love trying new things and
it's a win when our daughter loves clean recipes too!


Ingredients:
3 boneless chicken breast (we learned that it needed to be cut thinner because we had to bake it in the oven too after to cook it the whole way)
2 tbsp. of extra virgin olive oil
1 diced red pepper
1 diced green pepper (can add yellow peppers too, but we didn't)
1 diced red onion
1 tsp. of sea salt
2 tsp. of chili powder
2 tsp. of cumin
2 tsp. of garlic powder (Also, ingredients for the healthy queso and guacamole is listed below)

Instructions:
Heat the olive oil in a pan over high heat.
Cook the peppers, onion, salt, pepper until soft.
Then when the veggies are cooked, put them in the healthy queso (made before hand).
Mix it well together. In another bowl, combine the chicken breasts with the salt, chili powder, cumin and garlic powder and make sure it goes all over the chicken.
Cut the chicken in half and make sure that its cut thin, but not too thin so the chicken cooks properly. Fill the chicken with the queso and veggie mixture.Cook the chicken until fully cooked (5-7 minutes) If you are silly like us, you’ll have to bake it too! Haha! Serve with homemade salsa and homemade guacamole! YUM!


Clean Queso Dip!

Ingredients:
1/2 tsp. of extra virgin olive oil
1 tbsp. of minced garlic
2 tbsp. of cornstarch
1 and 1/2 cup of unsweetened almond milk (we used vanilla cause that's what we use for our Shakeology)
Use the peppers and onions you sauteed before to put in the dip! (If you want to use the dip for chips, then dice the peppers and onions instead of leaving them longer)
1 tbsp. of wheat flour
1/2 tsp. of chili powder
1/2 tsp. of onion powder
1/2 tsp. of cumin
1/4 tsp. of sea salt
1/8 tsp. of black pepper
1 cup of shredded cheddar cheese
1/2 cup of shredded pepper jack cheese

Instructions:
1.) Heat a saucepan over medium/low heat. Add the oil and garlic and cook until the garlic is brown. Usually only takes a minute.
2.) Stir the cornstarch into a 1/4 cup of the almond milk and set aside.
3.) Add the peppers and onions and cook for a couple minutes until they are heated. Sprinkle the wheat flour over the peppers/onions and stir for a minute.
4.) Turn the heat up to medium/high and stir in the rest of the almond milk with the cornstarch mixture made in step 2. Stir for 2-4 minutes until it is thickened.
5.) Turn the heat back to medium/low and stir in the cumin, chili powder, onion powder, salt, black peppers and cheeses. Then mix it til it's smooth.


Clean Guacamole!

Ingredients:
3 avocados
2 tomatoes
1 clove of diced garlic (we used the chopped garlic in a jar)
2-3 limes (depending on the size)
1 tsp. of onion powder
Sea salt and pepper to taste 
{ You can also add other seasonings if you want, depends on what you like }

Instructions:
Scrape out the avocados and remove the pit, put into a mixing bowl
Add the juice of the limes and mash them up to the consistency you want
Cut the tomatoes and garlic, add the salt, pepper, and onion powder and mix it
Then you are DONE!
