Skinny Watermelon Margaritas


Skinny Watermelon Margs!
So good and FRESH!!!
I can't wait to drink more of these this summer!


Ingredients: - 1 cup of fresh, ripe watermelon, cut into 1/2" cubes and frozen
- 1 tbs. of fresh lime juice
- 2 tbs. of blanco tequilla
- 1/2 tbs. of water

Put all the ingredients in blender and blend until smooth. If it's too thick, add a little more water! So, so good!! Now I just need to be sitting on the beach with this cocktail!!

For my fixers, this is 21 day fix APPROVED!!!

Clean Buffalo Dip


Clean Buffalo Dip
4th of July treat, but keeping it healthy!
I love splurging and not feeling guilty!
Definitely making this again!
Ingredients:
(Large party batch)
- 2 cups plain greek yogurt
- 2 cans shredded chicken 
- 1 cup shredded cheese (we used chedder) 
- 1/2 cup hot sauce (we used franks red hot) 
*Mix the ingredients together in large bowl then place in baking dish. Place in the oven for 30 min at 375. Stir ingredients often while baking.


21 day fix approved!
(Individual fix serving)
- 6 tbsp plain greek yogurt (1/2 red container)
- 6 tbsp shredded chicken (1/2 red container)
- 3 tbsp shredded cheese (1/2 blue container)
- hot sauce

When enjoying this dish I use veggies for dipping or quinoa and black bean chips. This recipe is also great to make for a dinner and have buffalo chicken wraps. Use whole grain tortillas when serving wraps! Watch out this stuff is addicting!

Turkey Zucchini and Quinoa Casserole


Turkey Zucchini and Quinoa Casserole
With tomatoes, green and red peppers!
SOOO yummy!

Ingredients:

- 1 lb. lean ground turkey
- 1 package quinoa 
- 1 chopped zucchini (depending on size)
- 1/2 red bell pepper sliced
- 1/2 green bell pepper sliced
- Add olive oil and pepper to taste

- 1 can low sodium organic chopped tomatoes 
- 1 1/2 tablespoon of garlic

Directions:
Just cook the ground turkey in a skillet until brown.
Next, add all of the other ingredients.
Place in a large pan or casserole dish.
Bake for 20-30 minutes at 400 degrees!!
We left ours in a little longer to make sure the veggies were cooked and soft.

- 1 red
- 1 yellow
1 serving is approximately 2 cups cooked.

Clean Blueberry Muffins


Healthy Blueberry Muffins
Not bad for the first time trying them!
Definitely going to have them again
Maybe trying to add some new ingredients too!
Ingredients:

2 cups of almond flour
2 eggs
1/4 cup of honey or maple syrup (we used honey) 
1/2 teaspoon of baking soda
1 1/2 tablespoons of apple cider vinegar
1/2 teaspoon of sea salt 
1 tablespoon of pure vanilla extract
2 tablespoons of olive oil
1 cup of fresh picked blueberries (or organic)

Directions:

1.) Preheat oven to 350 degrees.
2.) Prepare muffin tins with liners
3.) Add all the ingredients in one bowl and mix, but without the blueberries, mix until it thickens.
4.) Fold in the blueberries, be careful not to smash them
5.) Spoon them into the liners until the mix is gone
6.) Bake from 20-25 minutes. We did ours for 20 minutes!!!

Rainbow Fruit Salad



Rainbow Fruit Salad
with a Honey Lime Dressing
I LOVE FRUIT!


Ingredients:
1 lb. of fresh strawberries
1 pineapple cut into small squares
12 oz. of fresh blueberries
12 oz. of red grapes 
4 kiwis, peeled and diced
2 bananas diced

Dressing:
1/4 cup of honey
2 tsp of lime zest
1 tbsp of fresh lime juice (from the limes)
Toss all together and ENJOY!

Berry Acai Bowl

My FIRST Berry Acai Bowl
I am excited to experiment with it!

Ingredients:
2/3 cup of frozen blueberries
2/3 cup of frozen strawberries
1/2 banana
1 cup of unsweetened vanilla almond milk
1 teaspoon of Acai Powder

Toppings:
You can use anything, but this is what I used:
Strawberries
Blueberries
Bananas
Chai Seeds
{I should have added granola for some crunch}

Instructions:
1.) Put all the ingredients into a blender (not the toppings)
2.) If the mixture is not blending good, add more almond milk or water
3.) Blend until smooth
4.) Pour into a bowl
5.) Top with your toppings (whatever you choose)
6.) Serve and enjoy!

I got my Acai powder from Ebay - there is lots of brands you can get!! I also found these frozen packs that I want to try next!

Red Quinoa and Avocado Salad

Red Quinoa and Avocado Salad
So yummy and fresh!
Hit the spot for lunch and would be
great for a picnic!
Ingredients:
1 box of red quinoa (Food you feel good about red quinoa from Wegmans)
1 package of frozen corn
1 cup of fresh, chopped cilantro
1 cup of chopped green onions (usually a bunch will equal a cup)
2 tomatoes (we used the roma tomatoes)
2 avocados peeled and diced
1/2 tsp. of sea salt
1/2 tsp. of pepper
1/2 cup of lemon vinaigrette (organic version from Wegman's is what we used, I am sure you could use a different dressing too!)
{ You can add more veggies too, I added carrots, cabbage and beans }
